In this video, I go through a cook where things didn't go well. This is a Poor Man's Brisket (aka chuck roast) that ended up being something just as good as a tender brisket, but it was not what I intended. Sometimes cooks go bad but salvaging it and learning from it are the most important things you can do to become a better BBQer. Aaron Franklin said it best in his Masterclass:
“You only learn how to make good BBQ by making bad BBQ”
